RECIPES: Cucumber Mint Smoothie
For me cucumber and mint is like peanut & jelly, peas & carrots, peaches & creams. It is just a pair that naturally works and that I love, but one that I usually reserve for cocktails. Cucumber mint moitos? I’m in! A cucumber mint gimlet? Get out of town! So a few mornings ago I decided to take my beloved pairing and try it out in a green smoothie paired with melon, green apple, and a bit of spinach. The result was surprisingly delicious and refreshing. It’s perfect to cool down on a hot day and is a happy addition to my summer smoothie rotation.
Ingredients:
1 cup cucumber, peeled and seeded (English cucumber can stay whole)1 cup cantaloupe (or other melon), chopped1 cup fresh spinach1 U granny smith apple, chopped1 tbsp1/2 cup1/2
